Emphasis Will Be on Handmade Pizzas, Baked Fast

MONTROSE – Cold, locally brewed beer and freshly baked Neapolitan-style pizzas will have a home together in downtown Montrose when Sandy and Tom Hennessey open the doors to their Colorado Boy Pizzeria.

The new watering hole/eaterywill be located in the space at 320 E. Main Street, the former home of Simmer, and its ambiance will be similar to that of the Colorado Boy pub in Ridgway, with  freshly made pizzas baked to order and cold, locally brewed beer on tap.

The big difference, according to Tom Hennessey, is the emphasis in Montrose will be on the pizzeria, and not on brewing beer. Locally brewed beer will still have a home at the Colorado Boy Pizzeria, however.  

“We are really opening a pizzeria,” Hennessy said. “We won’t be doing any brewing there. Our emphasis is Neapolitan-style pizza, and we’ll be serving a few of our beers on tap, a few of Two Rascals’ beers and hopefully a few Horsefly [Brewing Company] beers.”

Opening a Montrose pizzeria has been on the Hennesseys’ minds for some time. Besides brewing beer, the duo aren’t novices when it comes to running pizzerias, as they have found success in both Palisade and Salida, Colo.

“We had a place like this in Salida one time,” Hennessey said. “You order at the register and almost as soon as you sit down with your beer or glass of wine, your pizza will be served. We are mainly concentrating on speed.”

An important key to the speedy pizza process, Hennessey said, is an open flame pizza oven that bakes pizzas at 800 degrees, and that’s what will be installed in Montrose. Along with the open-flame oven, anyone ordering a pizza can watch it being made, from the tossing of the dough to the slicing of the crisp pizza.

“The kitchen is right in the dining room. You can sit right at the counter and watch the pizza being made. It’s an idea we started back in 1992, and I am basically doing the same thing,” Hennessey said. “It’s going to be a fun place, it won’t be intimidating and kids will love it.”

Possibly best of all, he says, “All of our pizzas will be under nine bucks.”

The location in Montrose’s downtown core is a good fit for the Colorado Boy name. “I really like downtown Montrose,” said Hennessey. “That is where the heart of the city is, and I think it’s coming back. The location is just great, with all of the old brick walls, old ceilings and the beautiful old wood floors.”

Hennessey emphasized that he doesn’t want to be seen as a new brewery in downtown Montrose, and that he’s planning to celebrate the vital local brewery scene that’s already been established with Two Rascals and Horsefly Brewing Company.

“Those breweries are great, and they are our friends,” he said. “We plan on having a couple of our beers on tap, and we want to have other Montrose breweries on tap as well.”

Along with pizzas, Hennessey said he expects to serve a variety of salads and calzones as well.

The Hennesseys plan to open their Colorado Boy Pizzeria as soon as they receive the liquor license from the State of Colorado, which could take up to four months.

Until then, look for a newly color-schemed Colorado Boy logo going up on Main Street soon.
